What type of lighting? Led? What make.
A few things come to mind- is a fish or something picking at it?
what kind of water movement? And how much?
how long have they been in your tank?
were are they placed?
I know there are more questions here but it will help narrow down the issue. Also photos are very helpful.

You might have a fish pecking at it. Open brains and bubbles are very sustainable to nips. Brains will recover bubbles not so much.
Do you have a flame or other type of angels?

Does It show a feeding response? Most of the time they will at night - best time to feed

If you have no pickers then flow or lighting is most likely the problem, nitrates are really low as well, do you spot feed?

I agree chances are it has to do with flow or lighting if everything else checks out. That being said look up brown jelly disease. I hope that is not what it is,I have experienced it.
